![]() Preheat canola oil to a frying temperature of 375 F (190 C). Drain and transfer to a large bowl to cooldry well with paper towels. Cut potatoes into uniform length and thickness for even cooking. And when the oil's hot, start frying the potatoes in batches again until the fries are golden brown. Add potatoes and cook until they start to soften (about 3 minutes). Now, when all the potatoes have had their initial frying, turn up the heat until the oil reaches 400 F. Place half of the potatoes in the basket of the fryer. Place in a large bowl toss with 1 tablespoon vegetable oil. They won't be done at this point! This is just the first frying. When ready to fry, drain potatoes and place on paper towels pat dry. Remove each batch and drain them on new/dry paper towels. Transfer fries to a clean, dry bowl and toss together with olive oil, garlic powder, salt, and pepper. In 3 or 4 batches, use tongs to place a small amount of fries into the oil and until the potatoes are soft but not at all starting to brown, about 2 minutes per batch. Drain fries and thoroughly dry between two clean towels. Heat a few inches of oil in a heavy pot to 300 F (use a deep fry thermometer to make sure the temperature is accurate).
